Preheat the oven to 220°C/fan 200°C/fuel 7. Chop the hen into 3cm chunks and place in a 30cm non-stick frying pan on a medium-high warmth with 1tbsp olive oil, stirring frequently.

Trim the spring onions, chop into 1cm lengths and add to the pan. Trim and tear within the mushrooms.

  • 2 heaped tsp coconut cream
  • 450g pumpkin gnocchi
  • 160g sugar snap peas
